Extra Virgin Olive Oil - 3lt Tin
- This is the highest grade in olive oil. Extraction of Extra Virgin Olive Oil (EVOO) is done during the first pressing of the olive, by mechanical or physical means only. It must be cold pressed without the use of heat or chemicals. This oil cannot be altered other than to be washed, centrifuged and filtered. EVOO must have a free acidity, expressed as oleic acid, of no more than 0.8 grams per 100 grams (0.8%) and must have a superior taste, smell and colour. The less this oil is handled and the closer it is to its natural state the better.
